Another gem of a restaurant by Unlisted Collection, Pollen is a fine-dining Mediterranean restaurant helmed by Michelin star chef, Jason Atherton. Located in Singapore within the Flower Dome at Gardens by the Bay, Pollen sits amidst temperate olive trees, herbs and vegetation in a Mediterranean climate controlled environment.

Pollen tells its story through the journey of a seed, as a symbol of a new beginning in Singapore with newly invented recipes and ways of cooking. As the following outlet of the esteemed contemporary dining restaurant, Pollen Street Social in London, the seed planted in Singapore focuses primarily on modern Mediterranean inspired cuisine.

The growth cycle of the seed is being compared to the diner’s uprising experience. Enter Pollen, the logo signage denotes the start of a seed’s growth, within the restaurant, the seed grows as their experience enhances. Diners are greeted by menus and plates of originally created botanist drawings and documentations of herbs: Rosemary, Thyme and Olive alike, as menus resemble aged scientific books.
